Chocolate Monster Cookies
Ingredients:
1 cup salted butter, softened
1 cup granulated sugar
1 cup packed brown sugar
1 1/2 cups creamy peanut butter
3 large eggs
1 tablespoon vanilla extract
4 1/2 cups old-fashioned rolled oats
2 teaspoons baking soda
1/2 teaspoon salt
1 cup semi-sweet chocolate chips
1 cup M&Ms candies
1 cup chopped pecans optional
Directions:
Preheat the Oven: Preheat your oven to 350F 175C. Line baking sheets with parchment paper.
Mix the Wet Ingredients: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the peanut butter, eggs, and vanilla extract until well combined.
Prepare the Dry Ingredients: In a separate bowl, combine the oats, baking soda, and salt.
Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Add Mix-ins: Fold in the chocolate chips, M&Ms candies, and chopped pecans if using.
Form Cookies: Scoop out the dough about 2 tablespoons per cookie and place it on the prepared baking sheets, leaving enough space between each cookie.
Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the center is still soft. The cookies will continue to set as they cool.
Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy!
