Ingredients
For the Crust:
35 Oreo cookies regular or mint
5 tablespoons 71 g unsalted butter melted 杻
For the Cheesecake Filling:
32 ounces four 8-ounce blocks cream cheese softened to room temperature 燎
1 cups 300 g granulated white sugar
Pinch of salt
2 teaspoons peppermint extract
4 large eggs room temperature 讀
cup 152 g sour cream room temperature
cup 160 ml heavy cream
1 cup 170 g mini chocolate chips
Green food coloring optional
For the Ganache Topping:
4 ounces semi-sweet or bittersweet chocolate chopped
cup 120 ml heavy cream
Optional Garnishes:
Whipped cream
Andes mint candies chopped
Instructions
1. Make the Cookie Crust:
Prep the Oven: Preheat your oven to 350F 177C, placing the rack in the middle.
Prepare the Crust: In a food processor, pulse the 35 Oreo cookies until finely ground. In a large bowl, mix the cookie crumbs with 5 tablespoons of melted butter.
Assemble the Crust: Press the mixture firmly into the bottom and slightly up the sides of a 9-inch springform pan using a measuring cup or your fingers.
Bake the Crust: Place the pan on a baking sheet and bake at 350F 177C for 10 minutes. Remove from the oven and let cool.
2. Make the Cheesecake Filling:
Mix Cream Cheese and Sugar: In the bowl of a stand mixer fitted with a paddle attachment, beat 32 ounces of cream cheese and 1 cups sugar on medium speed for 4 minutes.
Add Remaining Ingredients: Add a pinch of salt, 2 teaspoons of peppermint extract, and beat after each addition. Add the eggs one at a time, beating for one minute after each. Finally, add cup sour cream, cup heavy cream, and fold in 1 cup mini chocolate chips. If desired, add green food coloring.
3. Bake the Cheesecake:
Lower the Oven Temperature: Reduce the oven temperature to 325F 160C.
Wrap the Pan: Wrap the outside of the springform pan in three layers of aluminum foil to prevent water from entering.
Prepare the Water Bath: Place the foil-wrapped springform pan in a large, high-sided roasting pan. Prepare 2 quarts of boiling water.
Pour Filling: Pour the cheesecake filling into the springform pan over the cooled crust. Smooth the top with a rubber spatula.
Add Hot Water: Carefully pour the hot water into the roasting pan until it reaches halfway up the sides of the springform pan.
Bake: Bake at 325F 160C for 80-90 minutes. The edges should be set and slightly golden brown, while the center should be set but slightly wobbly. If the top browns too much, lightly tent it with foil.
Cool in the Oven: Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour. This helps prevent cracking.
Chill: Cover the top of the cheesecake with a paper towel to absorb condensation and then cover with foil. Chill in the refrigerator overnight.
4. Make the Chocolate Ganache:
Chop the Chocolate: Place 4 ounces of chopped chocolate in a heatproof bowl.
Heat the Cream: In a saucepan, heat cup heavy cream over medium heat until simmering not boiling. Pour the hot cream over the chopped chocolate and let sit for 5 minutes without stirring.
Whisk Until Smooth: After 5 minutes, whisk until the ganache is smooth.
5. Assemble and Serve:
Pour Ganache Over Cheesecake: Once the cheesecake is chilled, pour the ganache over the top, smoothing it with a spatula if necessary. Return it to the refrigerator until set, about 15 minutes.
Serve: Cut into slices and garnish with chopped Andes candies and whipped cream if desired.
