Ingredients:
– 1 cup boiling water
– 2 cups all-purpose flour
– cup unsweetened cocoa powder
– 2 large eggs
– 1 cups granulated sugar
– 1 cup whole milk
– cup vegetable oil
– 1 tsp salt
– 1 tsp baking soda
– 1 tsp baking powder
– 2 tsp vanilla extract
For the Fudge Filling:
– 8 oz semi-sweet chocolate chopped
– 2 tbsp unsalted butter
– 1 cup heavy cream
For the Ganache:
– 8 oz semi-sweet chocolate chopped
– 1 tbsp unsalted butter
– cup heavy cream
Instructions:
1. Preheat your oven to 350F 175C. Grease and line two 9-inch round cake pans with parchment paper.
2. In a large mixing bowl, sift together the flour, unsweetened cocoa powder, granulated sugar, baking powder, baking soda, and salt until well combined.
3. Add the eggs, whole milk, vegetable oil, and vanilla extract to the dry mixture. Blend thoroughly until the batter is smooth.
4. Gradually pour in the boiling water, mixing continuously. Expect the batter to be quite thin; this is normal!
5. Divide the batter evenly into the prepared cake pans and place them in the preheated oven. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
6. While the cakes are baking, prepare the fudge filling. In a saucepan over medium heat, bring the heavy cream to a gentle simmer. Remove from heat, add the chopped semi-sweet chocolate and butter, and stir until the mixture is smooth. Set aside to cool and thicken.
7. Next, make the ganache. In another saucepan, heat the heavy cream until it simmers. Remove from the heat, add the chopped semi-sweet chocolate and butter, stirring until it becomes glossy and smooth. Allow it to cool slightly.
8. Once the cakes are cooled in the pans for about 10 minutes, transfer them to a wire rack to cool completely.
9. To assemble, place one cake layer on a serving plate. Spread a generous layer of fudge filling over the top before gently placing the second layer on top.
10. Pour the ganache over the cake, letting it drip over the edges.
11. Allow the ganache to set for a few minutes before slicing.
12. Serve with an optional sprinkle of chocolate shavings, sprinkles, or fresh berries for that extra touch of deliciousness!
