Chocolate Coffee Layer Cake Recipe
Ingredients:
For the cake:
2 cups all-purpose flour
1/2 cup cocoa powder
1 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup unsalted butter softened
2 cups sugar
4 large eggs
1 cup brewed coffee cooled
1/2 cup buttermilk
For the coffee buttercream:
1 cup unsalted butter softened
3 cups powdered sugar
2 tbsp instant coffee dissolved in 2 tbsp hot water
2 tbsp heavy cream
For decoration:
Chocolate swirls
Mini chocolate chips
Instructions:
1 Prepare the cake layers:
Preheat the oven to 350F 175C. Grease and line two 8-inch round cake pans.
In a bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt.
In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, beating well.
Mix in the cooled coffee and buttermilk alternately with the dry ingredients.
2 Bake the cakes:
Divide the batter evenly between the pans. Bake for 25-30 minutes or until a toothpick comes out clean. Cool completely.
3 Make the coffee buttercream:
Beat butter until creamy. Gradually add powdered sugar, dissolved coffee, and cream. Mix until smooth and fluffy.
4 Assemble the cake:
Place one cake layer on a serving plate, spread a generous layer of coffee buttercream, and top with the second layer. Frost the entire cake with the remaining buttercream.
5 Decorate:
Pipe swirls of buttercream on top, and add chocolate swirls and mini chocolate chips for an elegant touch.
6 Serve and enjoy:
