Chocolate Cherry Cheesecake
Ingredients:
200g chocolate cookies, crushed
100g unsalted butter, melted
500g cream cheese, softened
200g dark chocolate, melted
1 cup heavy cream
1/2 cup sugar
2 eggs
1 tsp vanilla extract
1/2 cup cherry syrup
Fresh cherries for garnish
Instructions:
1. Mix crushed cookies with melted butter and press into the base of a springform pan. Chill for 30 minutes.
2. Preheat oven to 160C 320F. Beat cream cheese and sugar until smooth. Add eggs, one at a time, followed by heavy cream and vanilla extract. Mix in melted chocolate until well combined.
3. Pour the mixture over the prepared crust and bake for 50-60 minutes or until set. Allow to cool completely.
4. Pour cherry syrup over the top of the cheesecake and garnish with fresh cherries.
5. Chill for at least 4 hours before serving. Slice and enjoy!
