Chocolate Berry Mousse Cake
Ingredients:
For the Chocolate Cake:
1 1/2 cups all-purpose flour
1 cup sugar
1/3 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup water
1/3 cup vegetable oil
1 tsp vanilla extract
1 tsp vinegar
For the Berry Mousse:
2 cups mixed berries strawberries, raspberries, blueberries
1/4 cup sugar
1 tbsp lemon juice
1 cup heavy cream
2 tsp gelatin
3 tbsp water
For the Chocolate Ganache:
1 cup dark chocolate, chopped
1/2 cup heavy cream
For Decoration:
Fresh berries strawberries, raspberries, blackberries, blueberries
Mint leaves
Chocolate pieces
Instructions:
1. Prepare the Chocolate Cake:
Preheat oven to 175C 350F. Grease and line a round cake pan.
In a bowl, combine flour, sugar, cocoa powder, baking soda, and salt.
Add water, oil, vanilla, and vinegar. Mix until smooth.
Pour into the pan and bake for 25-30 minutes. Let cool completely, then slice into two even layers.
2. Make the Berry Mousse:
Blend berries, sugar, and lemon juice until smooth. Strain to remove seeds.
In a small bowl, bloom gelatin in water for 5 minutes. Heat gently to dissolve.
Whip heavy cream to stiff peaks. Fold in berry puree and gelatin. Chill until set.
3. Assemble the Cake:
Place one cake layer on a serving plate. Spread a thin layer of mousse.
Arrange fresh berries on top, then cover with more mousse. Place the second cake layer on top.
Spread a thin layer of mousse over the entire cake. Chill for 2 hours.
4. Add the Ganache:
Heat cream and pour over chopped chocolate. Stir until smooth.
Pour ganache over the chilled cake, letting it drip down the sides.
5. Decorate:
Top with fresh berries, mint leaves, and chocolate pieces.
