Chewy Pumpkin Cookies
These soft and chewy pumpkin cookies are filled with warm spices and offer a rich, buttery flavor with just a hint of pumpkin. Perfect for fall, and no chill time needed!
Ingredients:
1 cup unsalted butter, browned and cooled
2/3 cup pumpkin puree well-drained
1/2 cup granulated sugar
1/2 cup dark brown sugar
2 egg yolks
2 tsp vanilla extract
1 2/3 cups all-purpose flour
1 1/2 tsp pumpkin spice
1 tsp baking soda
1 tsp cream of tartar
1/3 cup sugar 1 tsp cinnamon for rolling
Instructions:
Preheat your oven to 350F 175C.
In a large bowl, combine the browned and cooled butter with both sugars, mixing until well combined.
Add the egg yolks, vanilla, and drained pumpkin puree, stirring until smooth.
Gently fold in the flour, pumpkin spice, baking soda, and cream of tartar until just combined.
Roll dough balls in the cinnamon-sugar mixture, then place them on a baking sheet.
Bake for 10-12 minutes, until cookies are set and slightly golden.
