Beat the summer heat with this refreshing Cherry Vanilla Ice Cream! With swirls of sweet cherry filling, chocolate chunks, and creamy vanilla ice cream, this homemade treat is sure to be a favorite for hot days.

Ingredients:

For the Cherry Filling:

2 cups fresh cherries, pitted and halved

2 tbsp water

2 tbsp granulated sugar

1 tbsp cornstarch

For the Ice Cream:

2 cups heavy whipping cream 林

cup granulated sugar

4 tsp vanilla extract

Pinch of coarse sea salt 蓼

cup chocolate chunks

Instructions:

1 Prepare the Cherry Filling:

In a saucepan, stir together cherries, water, sugar, and cornstarch.

Heat over medium heat for 8-10 minutes, stirring occasionally, until the mixture thickens.


Remove from heat and let the filling cool on the counter for about 1 hour. Refrigerate until fully chilled.

2 Make the Ice Cream Base:

In a large bowl, whisk together heavy whipping cream, whole milk, granulated sugar, vanilla extract, and a pinch of sea salt.

Continue whisking until the sugar is completely dissolved.

3 Churn the Ice Cream:

Pour the ice cream mixture into your ice cream maker and churn according to the manufacturers directions usually about 20-30 minutes.

As the ice cream starts to thicken, slowly add the chocolate chunks while it continues to churn.

4 Layer and Freeze:

In a container, spoon of the vanilla ice cream and add a layer of chilled cherry filling.

Repeat the layers two more times.

Place a piece of wax paper directly on top of the ice cream to prevent freezer burn. Cover tightly with plastic wrap or a lid.

Freeze for at least 2-3 hours before serving.

Serving Tips:

Serve as is or in bowls with extra cherry topping and chocolate drizzle!

You can also sprinkle some chopped nuts or a cherry on top for a fun presentation.
