Chef Johns Almond Biscotti
Ingredients:
1 cup whole almonds, toasted2 1/4 cups all-purpose flour1 1/4 tsp baking powder1/4 tsp salt3/4 cup granulated sugar1/2 cup unsalted butter, softened2 large eggs1 tsp vanilla extract1/2 tsp almond extract
Instructions:
Preheat oven to 350F 175C. Line a baking sheet with parchment paper.In a bowl, whisk together flour, baking powder, and salt.In a separate bowl, beat butter and sugar until creamy. Add eggs one at a time, mixing well. Stir in vanilla and almond extracts.Gradually add the dry ingredients to the wet mixture until combined. Fold in toasted almonds.Divide the dough in half and shape into two logs on the prepared baking sheet.Bake for 25 minutes, then allow to cool slightly. Slice logs diagonally into biscotti pieces.Place slices back on the baking sheet and bake for an additional 10-15 minutes until golden and crisp.
