Cheesy Ground Beef Dip
Ingredients:
1 lb lean ground beef
1 tablespoon olive oil
1 small onion, diced
1 jalapeño, seeded and finely chopped
2 cloves garlic, minced
1 can 10 oz diced tomatoes with green chiles, drained
1/2 cup sour cream
8 oz cream cheese, softened
1 1/2 cups shredded cheddar cheese
Salt and pepper, to taste
Optional toppings: Chopped green onions, cilantro, extra jalapeño slices
Directions:
Cook the Ground Beef:
In a skillet over medium heat, heat the olive oil. Add the diced onion and jalapeño, cooking for 3-4 minutes until softened.
Add the garlic and cook for an additional 1 minute until fragrant.
Add the ground beef and cook until browned, breaking it apart with a spatula. Season with salt and pepper to taste.
Combine Ingredients:
Reduce heat to low and stir in the diced tomatoes, sour cream, and softened cream cheese. Stir until smooth and creamy.
Add the Cheddar Cheese:
Gradually add the shredded cheddar cheese, stirring until melted and well combined.
Serve Warm:
Transfer the dip to a serving bowl and top with green onions, cilantro, or extra jalapeño slices if desired. Serve warm with tortilla chips, crackers, or fresh veggies!
