Cheesecake Stuffed Baked Apples
Ingredients:
4 large apples
8 oz cream cheese, softened
1/2 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup graham cracker crumbs
1/4 cup melted butter
Caramel sauce, for drizzling
Whipped cream, for serving optional
Directions:
Preheat the Oven: Preheat your oven to 350F 180C.
Prepare the Apples: Slice off the tops of the apples and hollow out the cores, leaving enough apple flesh to create a sturdy shell for the cheesecake filling. Avoid cutting through the bottom of the apples.
Make the Cheesecake Filling: In a medium mixing bowl, beat together the cream cheese, sugar, vanilla extract, cinnamon, and nutmeg until smooth and creamy.
Fill the Apples: Spoon the cheesecake mixture into each hollowed-out apple, mounding it slightly on top.
Prepare the Crumb Topping: In a separate bowl, combine the graham cracker crumbs with the melted butter. Sprinkle this crumb mixture over the cheesecake filling in each apple.
Bake the Apples: Place the stuffed apples in a baking dish. Add a small amount of water to the bottom of the dish to prevent sticking. Bake in the preheated oven for 25-30 minutes, or until the apples are tender and the cheesecake filling is set.
Serve: Remove from the oven and let the apples cool slightly. Drizzle with caramel sauce and top with a dollop of whipped cream if desired.
