Ingredients:

1 cup granulated sugar

1/4 cup unsalted butter

1/4 cup water

1/4 cup light corn syrup

1/4 teaspoon salt

1 teaspoon vanilla extract

Directions:

Prepare the Work Area:

Line a baking sheet with parchment paper or a silicone baking mat. Set it aside.

Melt the Ingredients:

In a medium, heavy-bottomed saucepan, combine the sugar, butter, water, corn syrup, and salt. Cook over medium heat, stirring gently until the sugar is dissolved and the butter is melted.


Cook to the Right Temperature:

Attach a candy thermometer to the saucepan. Increase the heat to medium-high and cook the mixture, without stirring, until it reaches 290F 143C, the “”hard crack”” stage. This takes about 10-15 minutes. Watch closely to avoid burning.

Add Vanilla:

Remove the saucepan from heat and quickly stir in the vanilla extract. Be careful, as the mixture will bubble.

Pour the Candy:

Immediately pour the hot candy onto the prepared baking sheet. Spread it out with a heatproof spatula if needed to create an even layer. Work quickly, as the candy hardens fast.

Cool and Break:

Allow the candy to cool completely at room temperature, about 30 minutes. Once hardened, break it into pieces using a mallet or your hands.

Store:

Store the butterscotch candy in an airtight container at room temperature for up to 2 weeks.
