Buldak Korean Fire Chicken
Ingredients:
– 1 1/2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
– 2 tablespoons vegetable oil
– 1/2 cup gochugaru Korean red pepper flakes
– 2 tablespoons gochujang Korean red chili paste
– 2 tablespoons soy sauce
– 2 tablespoons honey
– 2 tablespoons rice vinegar
– 1 tablespoon sesame oil
– 5 cloves garlic, minced
– 1-inch piece ginger, grated
– 1/2 teaspoon black pepper
– 1 cup mozzarella cheese, shredded optional, for topping
– Green onions and sesame seeds for garnish
Directions:
1. Make the Marinade:
In a large bowl, combine gochugaru, gochujang, soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, and black pepper. Mix until well combined.
2. Marinate the Chicken:
Add the chicken pieces to the marinade, tossing to coat. Cover and marinate in the refrigerator for at least 30 minutes, or overnight for best flavor.
3. Cook the Chicken:
Heat vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook for 8-10 minutes, stirring occasionally, until the chicken is cooked through and slightly charred.
4. Add Cheese Optional:
Preheat your ovens broiler. Transfer the cooked chicken to an oven-safe dish, sprinkle shredded mozzarella cheese over the top, and broil for 2-3 minutes until the cheese is melted and bubbly.
5. Serve:
Garnish with chopped green onions and sesame seeds. Serve hot with steamed rice or a side of pickled vegetables.
