Brookies Cookies
A delicious blend of fudgy brownie cookie batter and classic chocolate chip cookie dough, Brookies are the ultimate cookie hybrid that will satisfy all your cravings in one bite!
Ingredients:
Chocolate Chip Cookie Batter :
1 cups All-Purpose Flour
cup Cocoa Powder, unsweetened
1 tsp Baking Powder
1 tsp Cornstarch
tsp Salt
8 Tbsp Unsalted Butter
8 oz Chocolate Chips milk, semi-sweet, or dark
1 tsp Vanilla Extract
2 Large Eggs room temperature
cup Brown Sugar packed
cup White Sugar
Instructions:
1 Prepare the Chocolate Chip Cookie Dough:
Make your favorite chocolate chip cookie dough, then place it in the fridge to chill.
2 Prepare the Brownie Cookie Batter:
Dry Ingredients: In a medium bowl, whisk together flour, cocoa powder, baking powder, cornstarch, and salt. Set aside.
Melt Chocolate and Butter: In a small saucepan, melt 4 oz of chocolate chips and butter over medium-low heat until smooth. Stir in vanilla extract and let cool.
3 Mix the Batter:
Whisk the eggs and sugars in a stand mixer for 3-4 minutes until thick and pale.
Add the cooled chocolate mixture and stir until combined.
Fold in the dry ingredients and remaining chocolate chips, being careful not to overmix.
4 Chill the Dough:
Place the brownie cookie dough in the fridge for 15 minutes.
5 Form the Cookies:
Preheat oven to 400F 200C. Line baking sheets with parchment paper.
Roll 1.25 oz portions of the chocolate chip cookie dough and 1.25 oz portions of the brownie dough into small balls.
Layer the cookie dough and brownie dough balls 2 chocolate chip balls 2 brownie balls to create a 5 oz cookie.
6 Shape and Bake:
Gently roll the cookie dough balls together, slightly marbling them.
Split the ball in half, rotate one half vertically, and roll back together. Repeat for the remaining dough.
Bake for 10-11 minutes, then let cool on the cookie sheet for 10-15 minutes before transferring to a cooling rack.
