Breakfast Burritos with Sausage and Eggs

Ingredients

1 pound breakfast sausage

6 large eggs

1/4 cup milk

1 cup shredded cheese cheddar or Monterey Jack


4 large flour tortillas

1/2 cup salsa optional

Salt and pepper, to taste

Chopped green onions or cilantro, for garnish

Instructions

Cook Sausage: In a skillet over medium heat, cook the breakfast sausage until browned and fully cooked. Drain excess fat and set aside.

Scramble Eggs: In a bowl, whisk together eggs, milk, salt, and pepper. Pour into the same skillet and scramble until just set. Stir in cooked sausage and cheese.

Assemble Burritos: Warm tortillas in a separate pan or microwave. Spoon the egg and sausage mixture onto each tortilla. Add salsa if desired.

Wrap Burritos: Fold in the sides of the tortilla and roll up tightly to form a burrito.
