Blueberry Cheesecake Rolls
These Blueberry Cheesecake Rolls are a heavenly blend of fresh blueberries and creamy cheesecake, wrapped in flaky crescent roll dough. They make for an indulgent breakfast, snack, or dessert treat thats quick and easy to whip up!
Ingredients:
1 package refrigerated crescent roll dough
1 cup fresh blueberries
cup granulated sugar
1 tbsp cornstarch
1 tsp lemon juice
8 oz cream cheese, softened
cup powdered sugar
1 tsp vanilla extract
1 tbsp butter, melted
cup graham cracker crumbs
Instructions:
Preheat the Oven:
Preheat your oven to 375F 190C. Line a baking sheet with parchment paper.
Prepare the Blueberry Mixture:
In a small saucepan, combine 1 cup blueberries, cup granulated sugar, 1 tbsp cornstarch, and 1 tsp lemon juice. Cook over medium heat, stirring occasionally, until the mixture thickens and the blueberries start to burst about 5-7 minutes. Remove from heat and allow to cool.
Make the Cheesecake Filling:
In a medium bowl, beat 8 oz cream cheese, cup powdered sugar, and 1 tsp vanilla extract until smooth and creamy.
Assemble the Rolls:
Unroll the crescent roll dough and separate it into triangles. Spread a layer of the cheesecake filling on each triangle, then add a spoonful of the blueberry mixture on top.
Roll and Bake:
Starting at the wide end, carefully roll up each triangle and place them on the prepared baking sheet. Brush each roll with melted butter and sprinkle with graham cracker crumbs for added crunch and flavor.
Bake:
Bake the rolls for 12-15 minutes, or until they turn golden brown.
Cool and Serve:
Let the rolls cool slightly before serving. These can be enjoyed warm or at room temperature!
