Ingredients:

For the Crust:

1 1/2 cups all-purpose flour

1/2 cup unsweetened cocoa powder

1/4 cup granulated sugar

1/2 tsp salt 蓼

1/2 cup 1 stick unsalted butter, cold and diced 杻

1 large egg yolk 讀

2 tbsp ice water

For the Filling and Topping:

1 cup fresh raspberries


1/4 cup raspberry compote

1 1/2 cups dark chocolate chips

1 cup heavy cream

Chocolate shavings for garnish

Instructions:

1 Prepare the Crust: In a food processor, combine the flour, cocoa powder, sugar, and salt. Add in the diced butter and pulse until the mixture resembles crumbs. Add the egg yolk and ice water, mixing just until the dough forms.

2 Form and Chill: Press the dough evenly into a 9-inch tart pan, then refrigerate for 30 minutes.

3 Bake the Crust: Preheat the oven to 375F 190C. Bake the crust for 20 minutes, then set aside to cool.

4 Layer the Berries: Spread a layer of raspberry compote on the cooled crust, then scatter fresh raspberries over the compote.

5 Make the Chocolate Ganache: In a saucepan, heat the heavy cream until it just begins to simmer. Pour over the chocolate chips in a bowl, let sit for 5 minutes, then stir until smooth. Pour the ganache over the raspberry layer.

6 Chill: Refrigerate the cheesecake for at least 2 hours to set the ganache.

7 Garnish and Serve: Before serving, sprinkle chocolate shavings on top for a final touch of elegance.
