Ingredients:

– 1 cup cooked black beans, mashed

– 1 cup shredded cheese cheddar or Monterey Jack

– 8 large jalapeños, halved and seeded

– 1 cup breadcrumbs

– 1 cup flour

– 2 eggs, beaten

– Vegetable oil for frying

– 1 teaspoon cumin

– 1 teaspoon garlic powder

– Salt and pepper, to taste

– For the salsa roja:

– 4 ripe tomatoes, roughly chopped

– 1 small onion, diced

– 2 cloves garlic, minced


– 1 jalapeño, chopped optional for extra heat

– Juice of 1 lime

– Fresh cilantro, chopped, to taste

– Salt and pepper, to taste

Instructions:

1. Begin by preparing the salsa roja. In a blender or food processor, combine the tomatoes, onion, garlic, optional jalapeño, lime juice, cilantro, salt, and pepper. Blend until smooth, then set aside.

2. In a mixing bowl, combine the mashed black beans, shredded cheese, cumin, garlic powder, salt, and pepper. Mix well until thoroughly combined.

3. Preheat vegetable oil in a deep frying pan over medium-high heat. Youll want enough oil to completely submerge the jalapeños.

4. Scoop a generous amount of the bean and cheese mixture into each jalapeño half, packing it in tightly.

5. Prepare a breading station: Place the flour, beaten eggs, and breadcrumbs in three separate shallow dishes.

6. Take each stuffed jalapeño, dip it in the flour to coat, then in the beaten eggs, and finally roll it in the breadcrumbs to create a crispy layer.

7. Once the oil is hot about 350F or 175C, carefully add the breaded jalapeños in batches, avoiding overcrowding. Fry until golden brown, about 3-4 minutes per side.

8. Remove the jalapeños from the oil and place them on a paper towel-lined plate to drain excess oil.

9. Serve hot with the freshly made salsa roja for dipping!
