Ingredients:

1 lb white fish fillets cod or haddock, cut into strips

1 cup all-purpose flour

1/4 cup cornstarch

Instructions:

1 Prepare the Chips:

Preheat your oven to 425F 220C. Toss the potato strips in olive oil, salt, and optional seasonings. Spread them in a single layer on a baking sheet and bake for 25-30 minutes, flipping halfway through until golden and crispy.

2 Make the Batter for Fish Fingers:

In a medium bowl, whisk together flour, cornstarch, baking powder, paprika, salt, and pepper. Gradually whisk in the cold sparkling water until smooth and well combined.

3 Batter and Fry the Fish Fingers:

Heat oil in a deep skillet or pot to 350F 175C. Dip each fish strip into the batter, letting excess drip off, and carefully place it in the hot oil. Fry for 3-4 minutes on each side until golden brown and crispy. Remove and drain on paper towels.

4 Serve:

Arrange the crispy fish fingers and chips on a serving plate. Serve with tartar sauce, ketchup, or malt vinegar for dipping.
