Bang Bang Chicken
Ingredients:
2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
1 cup buttermilk
1 cup all-purpose flour
1/2 cup cornstarch
1 tsp garlic powder
1 tsp paprika
Salt and pepper to taste
Oil for frying
For the Bang Bang Sauce:
1/2 cup mayonnaise
1/4 cup sweet chili sauce
2 tbsp sriracha adjust for spice level
1 tbsp honey
Instructions:
In a bowl, combine chicken pieces and buttermilk. Let marinate for 30 minutes.
In a separate bowl, mix flour, cornstarch, garlic powder, paprika, salt, and pepper.
Heat oil in a deep skillet or fryer to 350F 175C.
Dredge marinated chicken pieces in the flour mixture, coating evenly.
Fry chicken in batches until golden brown and cooked through, about 4-5 minutes. Drain on paper towels.
In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey to make the sauce.
Toss fried chicken in the Bang Bang Sauce until evenly coated.
Serve hot with rice, noodles, or a fresh salad for an irresistible meal!
