Banana Caramel Layer Cake Recipe
Ingredients:
For the Cake:
2 cups all-purpose flour
2 tsp baking powder
tsp baking soda
tsp salt
1 cup unsalted butter room temperature
1 cups granulated sugar
4 large eggs
1 tsp vanilla extract
1 cup buttermilk
For the Cream Filling:
2 cups heavy whipping cream
cup powdered sugar
1 tsp vanilla extract
For the Caramel Sauce:
1 cup granulated sugar
cup unsalted butter
cup heavy cream
tsp salt optional
Toppings:
2-3 ripe bananas sliced
cup crumbled graham crackers or digestive biscuits
Extra caramel sauce for drizzling

Instructions:
1 Make the Cake Layers:
1. Preheat oven to 350F 175C and grease and line three 8-inch round cake pans.
2. In a medium bowl, sift together flour, baking powder, baking soda, and salt.
3. In a large mixing bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
4. Alternate adding the dry ingredients and buttermilk to the wet mixture, beginning and ending with the dry ingredients.
5. Divide batter evenly among the prepared pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
6. Let cakes cool completely before assembling.
2 Prepare the Cream Filling:
1. Whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Set aside.
3 Make the Caramel Sauce:
1. In a medium saucepan, melt sugar over medium heat, stirring constantly until it turns golden brown.
2. Add butter and stir until combined. Slowly add heavy cream, whisking until smooth. Let it cool slightly before using.
4 Assemble the Cake:
1. Place the first cake layer on a serving plate. Spread a generous layer of whipped cream and drizzle with caramel sauce. Add banana slices.
2. Repeat with the second layer. Top with the final layer of cake.
3. Spread whipped cream on top and decorate with crumbled graham crackers, banana slices, and a drizzle of caramel sauce.
