Banana Bread Cake with Cream Cheese Frosting 療
For the Banana Bread Cake:
1 1/2 cups mashed ripe bananas about 3-4 bananas
2 cups all-purpose flour
1 teaspoon baking soda 籠
1/4 teaspoon salt 蓼
1/2 cup unsalted butter, softened 杻
1 cup granulated sugar
1/2 cup brown sugar, packed
2 large eggs 讀讀
1 teaspoon vanilla extract
1/2 cup buttermilk or milk 1 tbsp lemon juice/vinegar as a substitute 拏
For the Cream Cheese Frosting:
8 oz cream cheese, softened 燎
1/2 cup unsalted butter, softened 杻
3-4 cups powdered sugar adjust for sweetness
1 teaspoon vanilla extract
2-3 tablespoons heavy cream optional for a smoother consistency 拏
Directions:
1 Preheat Oven & Prepare Pan
Preheat oven to 350F 175C.
Grease and flour a 9×13-inch baking pan.
2 Make the Cake Batter
In a medium bowl, whisk together flour, baking soda, and salt.
In a large bowl, cream softened butter, granulated sugar, and brown sugar until light and fluffy.
Add eggs one at a time, beating after each addition, then mix in vanilla.
Stir in mashed bananas, then alternately add the flour mixture and buttermilk, beginning and ending with flour. Mix until just combined.
3 Bake the Cake
Pour batter into the prepared pan and smooth the top.
Bake for 30-35 minutes, or until a toothpick comes out clean.
Let the cake cool completely in the pan.
4 Make the Cream Cheese Frosting
In a bowl, beat softened cream cheese and butter until smooth.
Gradually add powdered sugar, vanilla, and heavy cream if desired, until creamy and smooth.
Spread frosting over the cooled cake, slice, and serve!
