Bacon Mushroom Swiss Cheeseburger Soup

Ingredients:

1 lb ground beef

6 strips thick-cut bacon, chopped

1 cups mushrooms, sliced

1 small onion, diced

2 cloves garlic, minced

4 cups beef broth

2 cups heavy cream

1 cups shredded Swiss cheese

2 tablespoons cream cheese

2 tablespoons all-purpose flour

2 tablespoons butter

1 teaspoon Worcestershire sauce

1 teaspoon Dijon mustard

Salt & pepper to taste


Fresh chives or parsley for garnish

Directions:

In a large pot or Dutch oven, cook chopped bacon until crispy. Remove and set aside, leaving some grease in the pot.

Add ground beef to the pot and cook until browned. Remove and set aside.

In the same pot, melt butter and sauté diced onion and garlic until fragrant, about 23 minutes.

Add sliced mushrooms and cook until tender, about 57 minutes.

Sprinkle in flour and stir to coat the veggies, cooking for another 12 minutes.

Gradually add beef broth while stirring, then bring to a simmer.

Stir in cream, cream cheese, Worcestershire sauce, Dijon mustard, and cooked beef. Simmer for 10 minutes.

Add shredded Swiss cheese and stir until melted and smooth.

Return bacon to the pot, season with salt and pepper, and simmer for another 5 minutes.

Serve hot, garnished with fresh herbs and optional extra cheese or crispy bacon crumbles.
