Apple Cheesecake Bars
These Apple Cheesecake Bars are the perfect fall dessert! With a crunchy cookie crust, creamy cheesecake filling, and sweet apple topping with a crumble, theyre sure to be a hit.
Ingredients:
For the Crust:
12 Graham cracker sheets 184g
50 Nilla wafer cookies 184g
1/4 teaspoon ground cinnamon
12 tablespoons unsalted butter, melted 杻
For the Cheesecake:
2 8-ounce packages cream cheese, room temperature 燎
2 large eggs, room temperature 讀
1/2 cup sour cream, room temperature
1/2 cup granulated sugar 2 tablespoons divided
1 teaspoon vanilla extract
2 Granny Smith apples, peeled, cored, and finely chopped
1/2 teaspoon cinnamon
For the Topping:
1 cup light brown sugar, packed 200g
1 cup all-purpose flour 124g
1/2 cup quick cooking oats 50g
1/2 cup unsalted butter, softened 113g 杻
Instructions:
1 Prepare the Pan:
Line a 9×13 pan with foil and spray with cooking spray. Preheat oven to 350F 175C.
2 Make the Crust:
Pulse graham crackers and Nilla wafers in a food processor until finely crumbled. Add cinnamon and melted butter, and stir to combine. Press the mixture into the prepared pan to form the crust.
3 Prepare the Cheesecake Filling:
Beat together cream cheese, eggs, sour cream, sugar, and vanilla extract with a mixer until smooth.
In a small bowl, toss chopped apples with the remaining sugar and cinnamon. Gently fold the apple mixture into the cream cheese batter. Pour the cheesecake mixture over the crust.
4 Make the Crumble Topping:
In a medium bowl, mix brown sugar, flour, and oats. Add softened butter and mix until the topping is crumbly. Sprinkle the crumble mixture evenly over the cheesecake layer.
5 Bake:
Bake for 40-45 minutes or until the top is golden brown and the cheesecake is set. Let the bars cool to room temperature.
6 Chill:
Once cooled, refrigerate for at least 4 hours before cutting into bars.
