Amazing White Chocolate Chip Pistachio Cookies
Ingredients:
1 cup unsalted butter, softened
1 cup white sugar
1 cup packed brown sugar
2 large eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 3.4-ounce package instant pistachio pudding mix
1 cup shelled pistachios, chopped
2 cups white chocolate chips
Instructions:
Preheat your oven to 350F 175C. Line baking sheets with parchment paper.
In a large bowl, cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla.
In a separate bowl, combine the flour, baking soda, baking powder, and salt. Gradually blend the dry ingredients into the creamed mixture.
Mix in the instant pistachio pudding mix until well blended. Stir in the chopped pistachios and white chocolate chips.
Drop rounded spoonfuls of dough onto the prepared baking sheets.
Bake for 10 to 12 minutes in the preheated oven, or until edges are lightly browned. Allow cookies to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
