Air Fryer Rack of Lamb with Roasted Garlic Aioli
Ingredients
1 rack of lamb 8 ribs, frenched
1/2 cup grated Parmesan cheese
1/2 cup panko breadcrumbs
2 tablespoons fresh parsley, chopped
1 teaspoon fresh thyme leaves
2 cloves garlic, minced
2 tablespoons Dijon mustard
1 tablespoon olive oil
Kosher salt and freshly ground black pepper
For the Roasted Garlic Aioli:
1 whole garlic bulb
1 tablespoon olive oil
1/2 cup mayonnaise
1 teaspoon lemon juice
Salt and pepper to taste
Instructions
Prepare the roasted garlic:
Preheat your oven to 400F 200C. Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft. Let cool, then squeeze the roasted garlic cloves into a bowl. Mash into a paste and mix with mayonnaise, lemon juice, salt, and pepper. Refrigerate until ready to serve.
Preheat the air fryer:
Preheat your air fryer to 380F 193C.
Prepare the lamb:
Pat the rack of lamb dry and season with salt and pepper. In a bowl, combine Parmesan, panko, parsley, thyme, and minced garlic. Brush the lamb with Dijon mustard, then press the breadcrumb mixture onto the meat to coat evenly.
Cook the lamb:
Place the rack of lamb in the air fryer basket with the bones curving downward. Cook for 15-20 minutes, or until the internal temperature reaches 130F 54C for medium-rare. Adjust cooking time as needed for desired doneness.
Rest and serve:
Remove the lamb from the air fryer and let it rest for 10 minutes. Slice between the ribs to separate chops. Serve with the roasted garlic aioli on the side.
