Slow Cooker Maple Dijon Pork
Ingredients:
2-3 lbs pork tenderloin or pork shoulder
1/3 cup pure maple syrup
1/4 cup Dijon mustard
2 tablespoons soy sauce or tamari for gluten-free
1 tablespoon apple cider vinegar
3 garlic cloves, minced
1 teaspoon paprika
1/2 teaspoon black pepper
1/2 teaspoon salt
1/4 cup chicken broth
Directions:
Prepare the Pork: Place the pork tenderloin or pork shoulder in your slow cooker.
Mix the Glaze: In a medium bowl, whisk together the maple syrup, Dijon mustard, soy sauce, apple cider vinegar, minced garlic, paprika, black pepper, and salt. Pour the mixture over the pork.
Add Broth: Pour the chicken broth around the pork in the slow cooker to keep it moist during cooking.
Cook: Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the pork is tender and can be easily shredded with a fork.
Optional Step for Glaze: If you prefer a thicker glaze, transfer the cooking liquid to a saucepan, simmer over medium heat until it reduces, and pour it back over the shredded pork.
Serve: Serve warm with your favorite sides, such as mashed potatoes, roasted vegetables, or a fresh salad.
