Smoky Ghost Pepper Cheeseburger Bites with Bourbon Kick
Ingredients:
1 lb ground beef 80/20 blend recommended
1/4 cup finely diced red onion
1 clove garlic, minced
1 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
1 tbsp bourbon
1 tbsp ketchup
4 slices sharp cheddar cheese, cut into small squares
8 mini burger buns or slider buns
2 ghost peppers, finely minced adjust to taste
1/4 cup mayo
1 tbsp Dijon mustard
Lettuce leaves and sliced pickles for garnish
1 tbsp olive oil
Directions:
In a large mixing bowl, combine ground beef, red onion, garlic, smoked paprika, salt, black pepper, ketchup, and bourbon. Mix gently but thoroughly.
Form the mixture into small patties, about 2 inches in diameter, and make a small indentation in the center of each patty.
Heat olive oil in a skillet over medium-high heat. Cook the patties for 2-3 minutes per side or until they reach your desired doneness. Add a square of cheddar cheese on top during the last minute of cooking to melt.
In a small bowl, combine mayo, Dijon mustard, and minced ghost peppers to create a spicy spread. Adjust the amount of ghost pepper based on your heat tolerance.
Lightly toast the slider buns in the same skillet or under a broiler for 1-2 minutes.
Assemble the bites: Spread the ghost pepper mayo on the bottom half of each bun, add a lettuce leaf, then place the cheeseburger patty, a pickle slice, and finally the top bun. Secure with a toothpick if needed.
Serve immediately and enjoy the smoky heat and bourbon-infused flavor!
