Shrimp and Spinach Alfredo Rollups

Ingredients:

12 lasagna noodles

1 lb shrimp, peeled and deveined medium-sized

3 cups fresh spinach, chopped

3 tbsp butter

3 cloves garlic, minced

1/2 tsp red pepper flakes optional

1 jar 15 oz Alfredo sauce or homemade

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg

Salt and pepper to taste


Fresh parsley for garnish

Directions:

Preheat your oven to 375F 190C. Grease a 9×13-inch baking dish with butter or non-stick spray.

Cook lasagna noodles according to package instructions. Drain and lay flat on a sheet of parchment paper to prevent sticking.

Heat 1 tbsp butter in a skillet over medium heat. Add shrimp, garlic, and red pepper flakes, cooking for 3-4 minutes until the shrimp turn pink. Remove from heat and set aside.

In a mixing bowl, combine ricotta cheese, spinach, egg, Parmesan, salt, and pepper. Mix well.

Spread a thin layer of Alfredo sauce over the bottom of the prepared baking dish.

Take a cooked lasagna noodle and spread a layer of the spinach mixture over it. Add a few shrimp pieces and sprinkle with mozzarella cheese. Roll up the noodle tightly and place seam-side down in the baking dish. Repeat with the remaining noodles.

Pour the remaining Alfredo sauce over the rollups and sprinkle the top with any leftover mozzarella and Parmesan cheese.

Cover with foil and bake for 25 minutes. Remove the foil and bake for another 10 minutes until bubbly and golden on top.

Garnish with fresh parsley before serving.
