Would you eat this Swedish Meatballs Over Mashed Potatoes ?
Ingredients:
For the Meatballs:
1 lb ground beef
1/2 lb ground pork
1/2 cup breadcrumbs
1/4 cup milk
1 egg
1 small onion, finely chopped
1/2 teaspoon ground allspice
1/4 teaspoon nutmeg
Salt and pepper to taste
2 tablespoons butter for frying
For the Sauce:
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups beef broth
1/2 cup heavy cream
1 teaspoon Dijon mustard
Salt and pepper to taste
For the Mashed Potatoes:
2 lbs potatoes, peeled and cubed
1/2 cup milk
4 tablespoons butter
Salt and pepper to taste
Directions:
Prepare the Mashed Potatoes: Boil the potatoes in salted water for 15-20 minutes or until fork-tender. Drain and mash with milk, butter, salt, and pepper. Set aside and keep warm.
Make the Meatballs: In a large bowl, combine the ground beef, ground pork, breadcrumbs, milk, egg, onion, allspice, nutmeg, salt, and pepper. Mix until just combined. Roll into 1-inch meatballs.
Heat 2 tablespoons of butter in a large skillet over medium heat. Cook the meatballs in batches for 6-8 minutes, turning occasionally, until browned and cooked through. Remove and set aside.
Prepare the Sauce: In the same skillet, melt 2 tablespoons of butter. Whisk in the flour and cook for 1-2 minutes to form a roux. Gradually add the beef broth, whisking constantly to avoid lumps. Stir in the heavy cream and Dijon mustard. Season with salt and pepper. Simmer for 5 minutes until the sauce thickens.
Return the meatballs to the skillet, coating them in the sauce. Simmer for another 5 minutes.
Serve: Spoon the mashed potatoes onto plates and top with the Swedish meatballs and creamy sauce. Garnish with chopped parsley if desired.
