White German Chocolate Cake with a Cheesecake Center
Ingredients:
For the White German Chocolate Cake
2 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs
1 teaspoon vanilla extract
1 cup buttermilk
1 cup white chocolate, melted
For the Cheesecake Filling
16 oz cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
For the Frosting
1 cup unsalted butter, softened
4 cups powdered sugar
1/2 cup heavy cream
1 teaspoon vanilla extract
1/2 cup shredded coconut, toasted
1/2 cup chopped pecans, toasted
Directions:
Preheat the oven to 350F 175C. Grease and flour two 9-inch round cake pans.
Prepare the Cheesecake Filling: In a mixing bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, followed by vanilla. Pour into a parchment-lined 8-inch round pan and bake for 25-30 minutes, or until set. Cool completely and refrigerate.
Make the Cake Batter: In a medium bowl, whisk together flour, baking powder, baking soda, and salt. In a large bowl, cream the butter and sugar until fluffy. Beat in eggs one at a time, then add vanilla and melted white chocolate. Alternate adding the dry ingredients and buttermilk, mixing until just combined.
Assemble the Cake: Divide half the cake batter between the two prepared pans. Place the cooled cheesecake layer in the center of one pan, then pour the remaining batter over both pans. Smooth the tops.
Bake the Cake: Bake for 30-35 minutes, or until a toothpick inserted in the cake not the cheesecake center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Prepare the Frosting: Beat butter until creamy, then gradually add powdered sugar, heavy cream, and vanilla until smooth and fluffy. Fold in toasted coconut and pecans.
Frost and Assemble: Place one cake layer on a serving plate and spread a thin layer of frosting. Add the cheesecake-filled layer on top and frost the entire cake. Decorate with additional coconut and pecans if desired.
