Ingredients:
1 sheet puff pastry, thawed
6 slices cooked bacon, crumbled
4 large eggs, scrambled
1/2 cup shredded cheddar cheese
1/4 cup shredded mozzarella cheese
1 tbsp chopped chives optional
1 tbsp milk for egg wash
1 tsp unsalted butter for scrambling eggs
Salt and pepper to taste
Directions:
Preheat your oven to 375F 190C. Line a baking sheet with parchment paper.
Heat a nonstick skillet over medium heat, add butter, and scramble the eggs. Season with salt and pepper, then set aside to cool slightly.
Roll out the puff pastry sheet on a lightly floured surface. Spread the scrambled eggs evenly over the pastry, leaving a 1-inch border around the edges.
Sprinkle the crumbled bacon, cheddar cheese, mozzarella cheese, and chives if using evenly over the eggs.
Roll the puff pastry tightly into a log, starting from one of the longer edges. Pinch the seam to seal.
Slice the log into 1-inch thick pinwheels and place them cut-side up on the prepared baking sheet.
Brush the tops of the pinwheels with milk or an egg wash for a golden finish.
Bake for 18-22 minutes, or until the pinwheels are golden brown and puffed.
Serve warm, and enjoy!
