Garlic Butter Steak Bites with Cheesy Smashed Potatoes
Ingredients:
For the Garlic Butter Steak Bites:
1 lb sirloin steak or ribeye, cut into bite-sized cubes
2 tbsp olive oil
4 tbsp butter
4 cloves garlic, minced
1 tsp fresh thyme or rosemary, chopped
Salt and pepper to taste
For the Cheesy Smashed Potatoes:
1 lb baby potatoes or regular potatoes, peeled and cut into chunks
1/2 cup sour cream
1/2 cup shredded cheddar cheese
2 tbsp butter
Salt and pepper to taste
2 tbsp fresh chives, chopped optional
Directions:
Start by boiling the potatoes in a large pot of salted water for 15-20 minutes, or until fork-tender. Drain and return to the pot.
While the potatoes are boiling, heat olive oil in a large skillet over medium-high heat. Add the steak bites and season with salt and pepper. Sear the steak for 2-3 minutes per side, or until browned and cooked to your desired level of doneness. Remove from the skillet and set aside.
In the same skillet, melt the butter over medium heat. Add the minced garlic and chopped fresh thyme or rosemary and sauté for 1-2 minutes, until fragrant.
Add the cooked steak bites back into the skillet and toss to coat with the garlic butter sauce. Cook for another 1-2 minutes, stirring occasionally. Remove from heat and set aside.
To prepare the cheesy smashed potatoes, use a potato masher or fork to gently mash the cooked potatoes in the pot. Add sour cream, shredded cheddar cheese, butter, salt, and pepper. Mash until smooth and creamy, then fold in chopped chives if using.
Serve the garlic butter steak bites over the cheesy smashed potatoes and enjoy!
