Chinese-Style Soy Sauce Braised Pork Ribs
Ingredients:
2 lbs pork ribs, cut into individual pieces
3 tablespoons soy sauce
2 tablespoons dark soy sauce
2 tablespoons oyster sauce
2 tablespoons Shaoxing wine or dry sherry
1 tablespoon sugar or rock sugar
4 cloves garlic, minced
1-inch piece of ginger, sliced
2 star anise
1 cinnamon stick
1 cup water
1 tablespoon vegetable oil
Chopped scallions and sesame seeds for garnish
Directions:
Prepare the Ribs:
Rinse the pork ribs under cold water and pat them dry with paper towels.
Sear the Ribs:
Heat the vegetable oil in a large skillet or wok over medium heat.
Add the pork ribs and sear on all sides until golden brown. Remove and set aside.
Make the Sauce Base:
In the same skillet, add the garlic, ginger, star anise, and cinnamon stick. Stir-fry for about 1 minute until fragrant.
Simmer the Ribs:
Return the ribs to the skillet. Add the soy sauce, dark soy sauce, oyster sauce, Shaoxing wine, sugar, and water. Stir well to coat the ribs evenly.
Cook Low and Slow:
Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 40-50 minutes, stirring occasionally, until the ribs are tender and the sauce has thickened.
Finish and Garnish:
Remove from heat and garnish with chopped scallions and sesame seeds before serving.
