Cowboy Cookies

Ingredients:

2 cups all-purpose flour

1 teaspoon baking soda

teaspoon baking powder

teaspoon salt

1 teaspoon ground cinnamon

1 cup unsalted butter, softened

1 cup brown sugar, packed

cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 cups old-fashioned rolled oats

1 cup semi-sweet chocolate chips

cup chopped pecans

cup shredded coconut

cup sweetened shredded coconut optional


Directions:

Preheat Oven: Set your oven to 350F 175C and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Set aside.

Cream Butter & Sugar: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy.

Add Eggs & Vanilla: Mix in the eggs one at a time, followed by the vanilla extract.

Combine Dry & Wet Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.

Fold in Mix-Ins: Stir in the rolled oats, chocolate chips, chopped pecans, and shredded coconut until evenly distributed.

Scoop & Bake: Using a cookie scoop or spoon, drop dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake: Bake for 10-12 minutes, or until the edges are golden brown but the centers are still soft.

Cool & Enjoy: Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack. Enjoy warm or store in an airtight container!
