Stuffed Catfish with Cheese, Spinach & Shrimp
Ingredients:
For the Catfish:
2 large catfish fillets skinless
1 tbsp olive oil
1 tsp Cajun seasoning
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
For the Filling:
1/2 cup cooked shrimp, chopped
1 cup fresh spinach, chopped
1/2 cup cream cheese, softened
1/4 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 garlic clove, minced
1 tbsp lemon juice
1/4 tsp salt
1/4 tsp black pepper
For Topping:
1 tbsp butter, melted
1/4 cup breadcrumbs optional for crispy topping
1 tbsp Parmesan cheese
Directions:
Preheat oven to 375F 190C.
In a small bowl, mix the Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and black pepper.
Pat the catfish fillets dry, brush with olive oil, and season both sides with the spice mixture.
In another bowl, combine the shrimp, spinach, cream cheese, mozzarella, Parmesan, minced garlic, lemon juice, salt, and black pepper to form the filling.
Carefully slice a pocket into the side of each catfish fillet, being careful not to cut all the way through.
Stuff each fillet generously with the shrimp and cheese mixture.
Place the stuffed fillets on a greased baking sheet.
If using, mix the melted butter with breadcrumbs and Parmesan, then sprinkle on top for a crispy finish.
Bake for 18-20 minutes, or until the fish is flaky and the cheese is bubbly.
Serve hot with a squeeze of fresh lemon and enjoy!
