Crockpot Pasta Fagioli
Ingredients:
1 lb ground beef or Italian sausage
1 small onion, diced
3 cloves garlic, minced
2 carrots, diced
2 celery stalks, chopped
1 28 oz can diced tomatoes
1 15 oz can tomato sauce
1 15 oz can kidney beans, drained and rinsed
1 15 oz can cannellini beans, drained and rinsed
4 cups beef broth
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon salt
teaspoon black pepper
teaspoon crushed red pepper flakes optional
1 cup ditalini pasta
cup grated Parmesan cheese
Fresh parsley for garnish
Directions:
In a skillet over medium heat, brown the ground beef or Italian sausage, breaking it into crumbles. Drain excess fat.
Transfer the cooked meat to a crockpot. Add diced onion, garlic, carrots, celery, diced tomatoes, tomato sauce, kidney beans, cannellini beans, and beef broth.
Stir in oregano, basil, salt, black pepper, and red pepper flakes if using. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
About 30 minutes before serving, cook ditalini pasta separately according to package instructions until al dente. Drain and stir into the crockpot.
Ladle into bowls, sprinkle with Parmesan cheese, and garnish with fresh parsley. Serve hot with crusty bread!
