4 bone-in or boneless pork chops
cup brown sugar, packed
2 tablespoons olive oil
1 teaspoon garlic powder
teaspoon onion powder
1 teaspoon smoked paprika
teaspoon salt
teaspoon black pepper
2 tablespoons soy sauce
1 tablespoon Dijon mustard
teaspoon dried thyme
teaspoon red pepper flakes optional
Directions:

Rub the pork chops with olive oil and coat them evenly with the brown sugar spice mixture.
In a large oven-safe skillet over medium-high heat, sear the pork chops for 2 minutes per side, until golden brown.
In another small bowl, mix soy sauce and Dijon mustard. Brush this mixture over the pork chops.
Transfer the skillet to the oven and bake for 15-20 minutes, or until the internal temperature reaches 145F 63C.
Let rest for 5 minutes before serving. Enjoy with mashed potatoes or roasted vegetables.
