Would you eat this Double Smash Cheeseburger with Caramelized Onions ?
Ingredients:
For the Smash Burgers:
1 lb ground beef 80/20
Salt and pepper to taste
2 tablespoons olive oil for cooking
4 burger buns preferably brioche
4 slices cheddar cheese
For the Caramelized Onions:
2 medium onions, thinly sliced
2 tablespoons butter
1 tablespoon olive oil
1 tablespoon brown sugar
Salt and pepper to taste
For the Burger Assembly:
Lettuce leaves
Pickles optional
Ketchup and mustard optional
Directions:
Prepare the Caramelized Onions:
a. Heat butter and olive oil in a large skillet over medium heat.
b. Add the sliced onions and cook, stirring occasionally, for 10-12 minutes until soft and golden brown.
c. Sprinkle with brown sugar, salt, and pepper, and cook for another 2-3 minutes, stirring until the onions are deeply caramelized. Remove from heat and set aside.
Make the Smash Burgers:
a. Divide the ground beef into 8 small balls, about 2 oz each.
b. Heat olive oil in a cast-iron skillet or griddle over medium-high heat.
c. Place the meatballs on the hot skillet, and immediately smash them down with a spatula to form thin patties. Cook for 2-3 minutes on each side until crispy and browned. Season with salt and pepper while cooking.
d. In the last minute of cooking, add a slice of cheddar cheese to each patty and cover to melt.
Assemble the Cheeseburgers:
a. Toast the buns lightly on the skillet until golden brown.
b. Layer the bottom of each bun with lettuce and a slice of pickle optional.
c. Place two cheese-smothered smash patties on each bun and top with a generous amount of caramelized onions.
d. Add ketchup and mustard optional and finish with the top bun.
Serve immediately with your favorite side of fries or a fresh salad!
