Would you eat this Garlic Butter Shrimp Scampi Lasagna ?
Ingredients:
For the Shrimp Scampi Filling:
1 lb large shrimp, peeled and deveined
3 tbsp unsalted butter
3 tbsp olive oil
4 cloves garlic, minced
1/2 tsp red pepper flakes optional
1/2 cup white wine or chicken broth
1 tbsp lemon juice
1/4 cup chopped fresh parsley
Salt and black pepper to taste
For the Creamy White Sauce:
3 tbsp unsalted butter
3 tbsp all-purpose flour
2 cups whole milk
1 cup heavy cream
1 cup grated Parmesan cheese
1/2 tsp salt
1/4 tsp ground nutmeg
1/2 tsp black pepper
For the Lasagna Layers:
9 lasagna noodles, cooked according to package instructions
2 cups shredded mozzarella cheese
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
1 tsp Italian seasoning
Directions:
Prepare the Shrimp Scampi Filling:
Heat butter and olive oil in a skillet over medium heat.
Add minced garlic and red pepper flakes, sauté for 1 minute until fragrant.
Add shrimp, salt, and black pepper. Cook for 2-3 minutes until pink and opaque.
Pour in white wine and lemon juice, cooking for another 2 minutes until slightly reduced.
Stir in parsley, remove from heat, and set aside.
Prepare the Creamy White Sauce:
In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.
Slowly whisk in milk and heavy cream, stirring constantly until smooth.
Add Parmesan cheese, salt, nutmeg, and black pepper. Cook for 5 minutes until thickened. Remove from heat.
Assemble the Lasagna:
Preheat oven to 375F 190C. Grease a 9×13-inch baking dish.
Spread a thin layer of white sauce at the bottom.
Layer 3 lasagna noodles, followed by half the shrimp scampi, a layer of ricotta cheese, and a sprinkle of mozzarella and Parmesan cheese.
Repeat with another layer of noodles, shrimp, white sauce, and cheeses.
Top with the final layer of noodles, remaining white sauce, mozzarella, and Parmesan. Sprinkle with Italian seasoning.
Bake and Serve:
Cover with foil and bake for 25 minutes. Remove foil and bake for another 10-15 minutes until golden and bubbly.
Let it rest for 10 minutes before slicing. Garnish with fresh parsley.
