Juicy Grilled Steak Sandwich with Sweet Onions and Gooey Cheese

Ingredients:

For the Sandwich:

1 pound ribeye or sirloin steak

4 crusty sandwich rolls or ciabatta buns

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon smoked paprika

For the Caramelized Onions:

2 large onions, thinly sliced

2 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon sugar

A pinch of salt

For the Cheese Topping:

8 slices provolone cheese or your favorite melting cheese

Optional Additions:

Fresh arugula or spinach

Dijon mustard or horseradish sauce


Directions:

Caramelize the Onions:

Heat butter and olive oil in a skillet over medium heat.

Add sliced onions, sugar, and a pinch of salt.

Cook slowly, stirring occasionally, until onions turn golden and sweetabout 20-25 minutes. Set aside.

Prepare the Steak:

Season the steak with salt, pepper, garlic powder, and smoked paprika.

Heat olive oil on a grill pan or outdoor grill over medium-high heat.

Cook the steak for 3-5 minutes per side, depending on your preferred doneness. Let rest for 5 minutes, then slice thinly against the grain.

Assemble the Sandwich:

Preheat your oven broiler.

Place the sliced steak on the bottom half of the sandwich rolls.

Top with caramelized onions and provolone cheese slices.

Place the sandwiches under the broiler for 2-3 minutes, or until the cheese is melted and bubbly.

Finish and Serve:

Add fresh arugula or a drizzle of Dijon mustard if desired.

Close the sandwich, slice in half, and serve warm.
