Grilled Chicken Bites with Creamy Garlic Sauce
Ingredients:
2 large boneless, skinless chicken breasts cut into bite-sized pieces
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
teaspoon salt
teaspoon black pepper
1 tablespoon fresh lemon juice
1 tablespoon butter
For the Creamy Garlic Sauce:
1 tablespoon butter
4 cloves garlic, minced
cup chicken broth
1 cup heavy cream
cup grated Parmesan cheese
1 teaspoon Dijon mustard
teaspoon red pepper flakes optional
2 tablespoons chopped fresh parsley for garnish
Directions:
In a bowl, toss the chicken bites with olive oil, garlic powder, onion powder, smoked paprika, salt, black pepper, and lemon juice. Let marinate for 15 minutes.
Heat a grill pan or skillet over medium-high heat. Melt 1 tablespoon butter, then add the marinated chicken pieces. Cook for 3-4 minutes per side until golden brown and cooked through. Remove and set aside.
In the same pan, melt 1 tablespoon butter and sauté the minced garlic for about 1 minute until fragrant.
Pour in the chicken broth and deglaze the pan, scraping up any browned bits. Stir in the heavy cream, Parmesan cheese, and Dijon mustard. Let simmer for 3-4 minutes until thickened.
Return the grilled chicken bites to the skillet, tossing them in the creamy garlic sauce. Simmer for another 2 minutes.
Sprinkle with red pepper flakes if using and garnish with fresh parsley before serving.
