Creamy Garlic Butter Chicken Thighs
Ingredients:
4 bone-in, skin-on chicken thighs
2 tablespoons unsalted butter
1 tablespoon olive oil
4 cloves garlic, minced
1 teaspoon Italian seasoning
teaspoon paprika
teaspoon salt
teaspoon black pepper
1 cup heavy cream
cup chicken broth
cup grated Parmesan cheese
1 teaspoon Dijon mustard
1 teaspoon fresh thyme leaves
Fresh parsley, chopped for garnish
Directions:
Heat a large skillet over medium-high heat. Add olive oil and butter.
Season the chicken thighs with Italian seasoning, paprika, salt, and black pepper.
Place chicken skin-side down in the skillet and sear for 5-7 minutes, until the skin is golden brown. Flip and cook for another 4-5 minutes. Remove from the pan and set aside.
In the same pan, add the minced garlic and cook for 1 minute until fragrant.
Pour in chicken broth and deglaze the pan, scraping up any browned bits.
Stir in the heavy cream, Parmesan cheese, Dijon mustard, and fresh thyme. Let simmer for 2-3 minutes.
Return the chicken thighs to the pan, skin-side up. Cover and cook for another 10-12 minutes, or until chicken is cooked through internal temp: 165F.
Garnish with fresh parsley and serve warm with rice, pasta, or mashed potatoes.
