Golden French Toast Filled with a Sweet Cinnamon Cream and Coated in Churro Sugar
Ingredients:
4 thick slices of brioche or Texas toast
4 oz cream cheese, softened
2 tablespoons powdered sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
2 eggs
cup milk
1 teaspoon vanilla extract
teaspoon salt
cup granulated sugar
1 teaspoon ground cinnamon for coating
2 tablespoons butter for cooking
Maple syrup and whipped cream for serving
Directions:
In a small bowl, mix the softened cream cheese, powdered sugar, vanilla extract, and cinnamon until smooth.
Slice each piece of bread halfway through to create a pocket and fill with the cream cheese mixture.
In a shallow bowl, whisk together eggs, milk, vanilla extract, and salt.
In another bowl, mix granulated sugar and cinnamon for the churro coating.
Heat butter in a large skillet over medium heat.
Dip the stuffed bread slices into the egg mixture, coating both sides, then place in the skillet.
Cook for 3-4 minutes per side until golden brown and cooked through.
Immediately coat the hot French toast in the cinnamon sugar mixture.
Serve warm with maple syrup and whipped cream.
