Creamy Alfredo Lasagna Soup
Ingredients:

1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
1 pound ground beef or sausage
1 teaspoon Italian seasoning
1/2 teaspoon red pepper flakes optional
4 cups chicken broth
1 can 14.5 oz diced tomatoes
1 cup heavy cream
1/2 cup cream cheese, cubed
8 oz lasagna noodles, broken into pieces
1 1/2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Salt and black pepper to taste
For Garnish:
Fresh basil or parsley, chopped
Directions:
Prepare the soup base: In a large pot, heat olive oil over medium heat. Add diced onion and garlic, sautéing for 2-3 minutes until fragrant.
Cook the meat: Add the ground beef or sausage and cook until browned, breaking it apart with a spoon. Drain any excess fat.
Simmer the soup: Stir in Italian seasoning and red pepper flakes. Pour in the chicken broth and diced tomatoes. Bring to a simmer and let cook for 10 minutes.
Add the creamy elements: Stir in the heavy cream and cream cheese, mixing until the cream cheese melts and the soup becomes smooth and creamy.
Cook the noodles: Add the broken lasagna noodles to the pot and cook for 8-10 minutes or until al dente.
Add the cheeses: Stir in the mozzarella and Parmesan cheeses, allowing them to melt into the soup. Season with salt and pepper to taste.
Serve: Ladle the soup into bowls, garnish with fresh basil or parsley, and enjoy!
