Mediterranean Salmon Patties
Ingredients:
2 cans 6 oz each pink salmon, drained and flaked
1 egg, beaten
cup breadcrumbs
2 tbsp fresh parsley, chopped
2 tbsp fresh dill, chopped
1 small onion, finely diced
2 cloves garlic, minced
1 tbsp lemon zest
2 tbsp lemon juice
1 tsp dried oregano
1 tbsp olive oil
Salt and pepper, to taste
Directions:
In a large bowl, combine the flaked salmon, egg, breadcrumbs, parsley, dill, onion, garlic, lemon zest, lemon juice, oregano, salt, and pepper. Mix until fully combined.
Shape the mixture into 8 small patties, pressing them gently to hold together.
Heat olive oil in a large skillet over medium heat.
Cook the patties for 3-4 minutes per side, or until golden brown and crispy.
Remove from the skillet and drain on paper towels. Serve immediately with a lemon wedge or dipping sauce.
