Grilled Surf & Turf Skewers with Chimichurri

Ingredients:

For the Skewers:

1 lb sirloin steak, cut into 1-inch cubes

1 lb large shrimp, peeled and deveined

1 red bell pepper, cut into 1-inch pieces

1 zucchini, sliced into rounds

1 red onion, cut into chunks

2 tbsp olive oil

1 tsp salt

1/2 tsp black pepper

1/2 tsp smoked paprika

1/2 tsp garlic powder

Wooden skewers soaked in water for 30 minutes

For the Chimichurri:

1 cup fresh parsley, finely chopped


2 cloves garlic, minced

1/2 tsp red pepper flakes

2 tbsp red wine vinegar

1/3 cup olive oil

Salt & pepper to taste

Directions:

Prepare the Chimichurri: In a small bowl, mix together parsley, garlic, red pepper flakes, red wine vinegar, olive oil, salt, and pepper. Stir well and set aside.

Marinate the Meat & Shrimp: In a bowl, toss the steak and shrimp with olive oil, salt, black pepper, smoked paprika, and garlic powder. Let marinate for 15-20 minutes.

Assemble the Skewers: Thread the steak, shrimp, bell pepper, zucchini, and red onion onto the skewers, alternating for variety.

Grill the Skewers: Preheat the grill to medium-high heat. Grill skewers for 2-3 minutes per side, until shrimp are pink and steak reaches desired doneness.

Serve: Drizzle the fresh chimichurri over the skewers and serve immediately.
