Crispy Roasted Potatoes with Honey Glaze and Bacon

Ingredients:

2 lbs baby potatoes, halved

6 slices bacon, chopped

3 tablespoons honey

2 tablespoons olive oil

1 teaspoon smoked paprika

1/2 teaspoon salt adjust to taste

1/2 teaspoon black pepper

2 cloves garlic, minced

1 tablespoon fresh thyme leaves optional

Directions:


Preheat your oven to 400F 200C. Line a baking sheet with parchment paper or lightly grease it.

In a large bowl, toss the halved baby potatoes with olive oil, smoked paprika, salt, and black pepper.

Spread the potatoes in an even layer on the prepared baking sheet. Roast for 20 minutes.

While the potatoes are roasting, cook the chopped bacon in a skillet over medium heat until crispy. Remove and set aside, leaving about 1 tablespoon of bacon grease in the pan.

In the same skillet, add the minced garlic and honey. Stir for 1-2 minutes over low heat until fragrant. Remove from heat.

Remove the potatoes from the oven, drizzle with the honey garlic mixture, and sprinkle the crispy bacon on top. Toss gently to coat.

Return to the oven and roast for an additional 10-15 minutes, until golden and crispy.

Sprinkle with fresh thyme before serving if using. Serve warm.
