Hawaiian BBQ Chicken and Pineapple Foil Packets

Ingredients:

4 boneless, skinless chicken breasts

1 cup BBQ sauce honey BBQ or teriyaki BBQ works well

2 cups pineapple chunks fresh or canned, drained

1 red bell pepper, diced

1 yellow bell pepper, diced

1 small red onion, sliced

1 zucchini, sliced

2 tablespoons olive oil

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon chopped fresh cilantro optional, for garnish

1 lime, cut into wedges

Directions:

Preheat & Prep Foil:


Preheat your grill to medium heat 375F/190C or preheat your oven to 400F 200C.

Tear 4 large sheets of aluminum foil, about 12×18 inches each, and lightly grease with cooking spray.

Season & Assemble:

In a bowl, toss chicken breasts with olive oil, garlic powder, smoked paprika, salt, and black pepper.

Place one seasoned chicken breast in the center of each foil sheet.

Evenly distribute pineapple chunks, bell peppers, red onion, and zucchini over the chicken.

Drizzle BBQ sauce over each chicken breast.

Seal & Cook:

Fold the sides of the foil up and over the chicken, sealing tightly to create a packet.

Place foil packets on the grill for 20-25 minutes or in the oven for 25-30 minutes, until the chicken reaches an internal temperature of 165F 75C.

Serve & Garnish:

Carefully open the foil packets watch out for steam!.

Sprinkle with fresh cilantro and serve with lime wedges for a zesty kick.

Enjoy straight from the packet or plate with rice, quinoa, or a fresh salad!
