Grilled Sausages with Peppers and Mashed Potatoes

Ingredients:

For the Grilled Sausages & Peppers:

4 Italian sausages mild or spicy

1 tablespoon olive oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

1 teaspoon garlic powder

teaspoon salt

teaspoon black pepper

teaspoon smoked paprika

1 tablespoon balsamic vinegar optional, for extra depth

For the Creamy Mashed Potatoes:

2 lbs Yukon Gold potatoes, peeled and cubed

cup heavy cream or whole milk

4 tablespoons butter

2 cloves garlic, minced

teaspoon salt

teaspoon black pepper


Directions:

Prepare the Mashed Potatoes:

Bring a large pot of salted water to a boil.

Add cubed potatoes and cook for 15-20 minutes, until fork-tender.

In a small saucepan, heat heavy cream, butter, and minced garlic until warm.

Drain the potatoes and mash them until smooth.

Stir in the warm cream mixture, salt, and pepper, then set aside.

Grill the Sausages:

Preheat a grill to medium-high heat.

Grill the sausages for 10-12 minutes, turning occasionally, until they are golden brown and fully cooked internal temp: 160F.

Sauté the Peppers & Onions:

While sausages are grilling, heat olive oil in a large skillet over medium heat.

Add sliced peppers and onions, seasoning with garlic powder, salt, black pepper, and smoked paprika.

Sauté for 8-10 minutes until soft and slightly caramelized.

Stir in balsamic vinegar if using for extra flavor.

Assemble & Serve:

Spoon mashed potatoes onto plates, top with grilled sausages, and serve sautéed peppers on the side.
